  • 4 eggs
  • 250g self-raising flour
  • 225g sultanas
  • 150g dried currants
  • 100g candied cherries - rinsed, dried and quartered
  • 4 tablespoons candied mixed fruit peel, chopped
  • 2 tablespoons grated lemon zest
  • 2 teaspoons mixed spice
  • 500g almond paste
  • 2 tablespoons apricot jam
  • 1 egg, beaten

  1. Preheat oven to 150 C / Gas mark 2. Grease and flour a 20cm springform cake tin. Line the bottom and sides of tin with greased baking parchment.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour. Stir in the sultanas, currants, candied cherries, mixed fruit, lemon zest and mixed spice. Pour 1/2 of batter into prepared tin.
  3. Divide almond paste into 3 equal portions. Roll out 1/3 of the almond paste to a 20cm circle. Place the circle of almond paste on the cake batter in tin. Cover with remaining cake batter.
  4. Bake in the preheated oven for 2 1/2 hours, or until evenly brown and firm to the touch. If the cake is browning too quickly, cover with foil after an hour of baking. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Preheat grill.
  5. When the cake has cooled, brush the top with warmed apricot jam. Roll out 1/3 of the almond paste into an 10cm circle and place on top of cake. Divide the remaining 1/3 of almond paste into 11 pieces and roll into balls. Brush the almond paste on top of cake with beaten egg. Arrange the 11 balls around the outside edge on the top of cake. Brush the balls lightly with egg.
  6. Place cake under the grill for 8 to 10 minutes, or until almond paste is golden brown.

Just made this Simnel Cake and it came together beautifully. I did use ready made almond paste and used 3 X 7oz tubes as we all love it. I added some almond essence to the batter as well as a little cinnamon, allspice, ginger and nutmeg. I brushed the warm cake with about 2 tablespoons of Disaronno liquer before using the apricot jam.Make sure you keep the cake a good way down from the heat while browning the the top as it can burn very quickly.-06 Apr 2012

Simnel Cake

Simnel cake is a light fruit cake with two layers of almond paste or marzipan, one in the middle and one on top, that is toasted, and traditionally eaten at Easter but will last a long time in the unlikely event it's not eaten quickly.

Simnel cake was often made for the middle Sunday of Lent, when the forty day fast would be relaxed, Laetare Sunday, also known as Refreshment Sunday, Mothering Sunday, Sunday of the Five Loaves, and Simnel Sunday – after the cake. Historically it was made by female servants of large country houses and taken to their families their rare visits home.

Decedent and delicious, this symbolic Easter cake is decorated to signify aspects of Christianity. The 11 marzipan balls placed around the circular marzipan coated cake depict 11 disciples. Although there were 12 apostles of Jesus Christ, Judas Iscariot betrayed him and is therefore omitted.

The meaning of the word "simnel" is unclear: there is a 1226 reference to "bread made into a simnel", which is understood to mean the finest white bread, from the Latin simila – "fine flour". This tradition developed late in the Victorian era, altering the mid Victorian tradition of decorating the cakes with preserved fruits and flowers.

Method:

Line the base and sides of a 9 inch (23cm) round, or a 8 inch (20.5cm) square tin with brown paper and greaseproof paper.

Wash the cherries and dry them. Cut in two or four as desired. Blanch the almonds in boiling water for 1-2 minutes, rub off the skins and chop them finely. Mix the dried fruit, nuts, ground almonds and grated orange and lemon rind. Add about half of the whiskey and leave for 1 hour to macerate.

Next make the almond paste:

Sieve the castor sugar and mix with the ground almonds. Beat the eggs, add the whiskey and 1 drop of pure almond essence, then add to the other ingredients and mix to a stiff paste. (You may not need all the egg). Sprinkle the work top with icing sugar, turn out the almond paste and work lightly until smooth.

Preheat the oven to 180°C/350°F/Gas Mark 4.

Cream the butter until very soft, add the sugar and beat until light and fluffy. Whisk the eggs and add in bit by bit, beating well between each addition so that the mixture doesn't curdle. Mix the spice with the flour and stir in gently. Add the grated apple to the fruit and mix in gently but thoroughly (don't beat the mixture again or you will toughen the cake).

Put half of the cake mixture into the prepared tin, roll about half of the almond paste into an 8 1/2 inch (21.5cm) round. Place this on top of the cake mixture in the tin and cover with the remaining mixture. Make a slight hollow in the centre, dip you hand in water and pat it over the surface of the cake: this will ensure that the top is smooth when cooked. Cover the top with a single sheet of brown paper.

Put into the preheated oven reduce the heat to 160°C/325°F/Gas Mark 3 after 1 hour. Bake until cooked, 3 - 3 1/2 hours approx., test in the centre with a skewer - it should come out completely clean. Pour the rest of the whiskey over the cake and leave to cool in the tin.

NOTE: When you are testing do so at an angle because the almond paste can give a false reading.

Next day remove the cake from the tin. Do not remove the lining paper but wrap in some extra greaseproof paper and tin foil until required.

When you wish to ice the cake, roll the remainder of the almond paste into a 9 inch (23cm) round. Brush the cake with a little lightly beaten egg white and top with the almond paste. Roll the remainder of the paste into 11 balls. Score the top of the cake in 1 1/2 inch (4cm) squares or diamonds. Brush with beaten egg yolk, stick the ‘apostles’ around the outer edge of the top, brush with beaten egg. Toast in a preheated oven 220°C/425°F/Gas Mark 7, for 15-20 minutes or until slightly golden. Decorate with an Easter Chicken. Cut while warm or store for several weeks when cold.

NB: Almond paste may also be used to ice the side of the cake. You will need half the almond paste again.

This cake keeps for weeks or even months, but while still delicious it changes both in texture and flavour as it matures.

Fruit cakes start, as so many good things do, with butter, sugar, flour and eggs. Some use raising agents, too. For Leiths Baking Bible, Geraldene Holt’s Cakes, and pastry chef Roger Pizey’s World’s Best Cakes this comes in the form of baking powder, while Elizabeth David gives a Victorian recipe for a yeast-raised version in her English Bread and Yeast Cookery. Because I’m after a lighter cake, I’m also going to use a raising agent – baking powder rather than yeast, on the basis that it produces a softer, more delicate crumb (and is considerably easier).

Pizey also replaces a portion of the flour with ground almonds. I’m initially worried this might be almond overkill, given the marzipan topping, but it makes the crumb sweeter and slightly more moist. Leiths does the same with rice flour, presumably for its soft, pleasingly sandy texture, but I can’t pick this out here.

Sugar, I think, should be the soft brown variety for maximum flavour, but I don’t like the bittersweet edge of Annie Bell’s treacle it does make the crumb more tender, but it’s too heavy and Christmassy for my liking, especially in conjunction with the dried fruit. Gary Rhodes’s golden syrup in the recipe in New British Classics seems a safer bet.

Not all the recipes use milk, but a looser batter gives a more moist result.


Put the ground almonds and icing sugar in a bowl or food processor and whisk or whiz. Mix in the almond essence, the orange blossom water and the egg yolk. In a separate bowl, whisk the egg white with a drop of water to loosen, then add just enough to the egg yolk mix to bring it together into a soft dough. Form into a ball, wrap and chill. Or use 500g shop-bought marzipan.


  • 1 1/4 pounds/560 grams almond paste (marzipan)
  • 1 pound/450 grams dried mixed fruits (currants, raisins, sultanas, glace cherries)
  • 3 ounces/80 grams candied peel (chopped)
  • 8 ounces/225 grams plain flour (or all-purpose)
  • 1 pinch of salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg (freshly grated)
  • 6 ounces/175 grams butter
  • 6 ounces/175 grams fine sugar
  • 3 large eggs (fresh and free-range, beaten)
  • 2 tablespoons apricot jam

Line a 7-inch cake tin with parchment or greaseproof paper.

Divide the almond paste into three portions and take one portion and roll it into a round the size of the cake tin.

In a large, roomy baking bowl, mix the mixed dried fruits and candied peel with the flour, salt, and spices.

In another large bowl, cream the butter with the sugar, until light and fluffy.

Add the beaten egg to the butter mixture a little bit at a time, beating well after each addition — don't try to rush this process as the batter could curdle. If it does, add a tablespoon of the flour and mix again, this should bring the mixture back together.

Carefully fold in half the flour and half the fruit into the egg and butter mixture, once incorporated repeat with the remaining flour and fruit.

Put half of the cake mixture into the tin, smooth and cover with the round of almond paste.

Put the remaining cake mixture into the tin and smooth the surface carefully.

Bake in the center of the oven for 1 hour.

Lower the heat to 300 F and bake for 1 1/2 hours more or (depending on your oven), until the cake is golden brown. To check if the cake is cooked, insert a skewer into the cake, it should come out clean and dry. If it is, remove from the oven and leave to cool in the tin. If not, cook it a little longer.

Roll another third of almond paste, again to the size of the tin. Make the remaining almond paste equally into 11 tiny balls.

Once the cake is completely cold, remove from the tin and brush the top of the cake with apricot jam and cover with the disc of almond paste.

Place the 11 tiny balls evenly around the edge. Brush them all over with a little apricot jam.

Place under a hot grill until lightly browned.

Decorate the cake as you wish with tiny Easter eggs or any other Easter theme.

Simnel cake

Preheat the oven to 170°C/fan 150°C/gas 3. Grease and line the base and sides of a 20cm deep-sided round cake tin with 5g butter and baking parchment. Place the dried fruit in a mixing bowl. Pour over boiling water to cover and leave to soak for 10 minutes. Strain the dried fruit through a sieve, pat dry on kitchen paper and leave to cool slightly.

Cream the remaining butter and sugar together in the bowl of a free-standing mixer until light and fluffy. While the mixer is still on, gradually add the eggs, one at a time, adding 1 tbsp flour with each addition until well mixed. Turn off the machine and, using a large metal spoon, fold the remaining flour and mixed spice into the cake batter. Add the soaked fruits and finely chopped ginger and mix to thoroughly combine.

Roll a third of the marzipan into a circle the same size as the tin. Spoon half the cake mixture into the prepared loaf tin, spread level and lay the marzipan disc on top. Cover with the rest of the cake mixture and spread level with the back of the spoon. Cook in the oven for 1 hour, then turn the oven temperature down to 150°C/fan 130°C/gas mark 2 and bake for a further 50 minutes, until the cake is golden and a skewer inserted into the middle of the cake comes out clean. Cover the cake loosely with foil if it appears to be browning too quickly. Remove from the oven and leave the cake to cool slightly in the tin, then turn out on to a wire rack to cool completely.

Heat the apricot jam in a small pan, then pass through a sieve to remove any lumps. Turn the cake so the top is facing up and brush with the jam.

Divide the remaining two-thirds of the marzipan into two equal parts. Roll one half out into a circle the same size as the top of the cake, then roll the other half into 11 round balls. Place the marzipan circle on top of the cake and, with a knife, gently score diamonds into the surface, then top with the marzipan balls. Preheat the grill to medium-high heat and place the cake underneath for 1-2 minutes to turn golden.


Can I use a layer of marzipan in the middle of the cake instead of chopping it?

Many Simnel cakes have a layer of marzipan running through the centre. This is done by adding half of the cake mixture to the tin, rolling out your marzipan into a circle the same width as the cake, adding this to the tin and then adding the remaining mixture on top before baking.

I decided to chop my marzipan as firstly, I find it a little quicker and easier to do and secondly, having the marzipan scattered through the cake helps to ensure that it cooks all the way through to the bottom and rises well in the middle.

Step-by-step

  1. Preheat the oven to 140°C/275°F fan/gas mark 1. Line a 20cm (8in) round cake tin with greaseproof paper (top and sides).

  6. Pour half of the cake mixture into the prepared tin and smooth the surface. Top with one of the marzipan discs. Then pour in the rest of the cake mixture and bake in the preheated oven for about 3 hours. Leave it to cool in the tin, then turn it out onto a wire rack to cool completely.
  7. To assemble the cake, brush the top of the cake with apricot jam and cover with the other marzipan disc. Dip the balls in a little of the jam and place them around the cake, finishing with the big one in the middle.
  8. Preheat the grill, then put the cake under to just brown the top &ndash keep an eye on it as it will brown quickly (about 1 minute). Alternatively, use a cook's blowtorch.
